If I want to strip the paint off my hull can I use poly stripper or will it ruin the epoxy on the wood?

In general, not much attacks epoxy that you can buy in a hardware store. That said, I would very carefully do a test on a small area that doesn't show. My guess is that you are safe but it's not my hull!
